A worldwide classic for your kitchen: Bigi Mama Black Eye Beans
The black-eyed pea, also known as the cowpea, is far more than just a legume. It's a symbol of culinary tradition and a versatile all-rounder in kitchens around the world. Bigi Mama brings you this nutritious and delicious bean in premium dried quality.
Its trademark—the small black "dot"—gives it not only its name but also its distinctive character. Once cooked, the beans develop a wonderfully smooth, creamy texture, perfect for purées, stews, and as a filling side dish. Their mild flavor makes them an ideal canvas for bold spices and flavors, making them a favorite in African cuisine.
Preparation instructions:
Dried beans must be soaked and cooked before consumption.
- Sorting & Washing: Briefly sort the beans to remove any stones or damaged beans. Then rinse thoroughly under running water.
-
Soaking:
- Long-term method (recommended): Soak the beans overnight (at least 8 hours) in plenty of cold water.
- Quick method: Cover the beans with water in a pot, bring to a boil, simmer for 2 minutes, remove from heat and let stand covered for 1 hour.
- Cooking: Drain the soaking water and cover the beans with fresh water in a pot. Bring to a boil, then reduce the heat and simmer for approximately 60-90 minutes, until the beans are tender. Add salt only towards the end of the cooking time, as it can prevent the beans from tenderizing.
- Important note: Never eat beans raw!
Culinary inspiration:
- Nigerian Bean Porridge (Ewa Agoyin): Mash the cooked beans into a creamy porridge and serve with a spicy palm oil and onion sauce.
- Nutritious salads: Mix cooked and cooled beans with corn, peppers, onions and a light dressing.
- Hearty stews & curries: As a protein-rich ingredient in vegetarian or meat-based dishes.
- Rice and beans: A Caribbean classic, often prepared with coconut milk.
